Eggocado Breakfast

Mr. Artifact had several other suggested names for this breakfast:  Leggo  my cado and other names:  some not fit for a family blog.

This is a simple egg scramble spooned into an avocado half.

Serves 2

  • 1 avocado
  • 2 eggs
  • 1/4 C cream or half and half
  • 1/4 C diced red, yellow or green bell peppers
  • 1/4 C diced herbs (parsley, chives, oregono, thyme, etc)
  • 2 T goat cheese, crumbled
  • 1 T lemon juice
  • 2 T butter
  • salt and pepper

Halve avocados, squirt with lemon.  You can/should cut off bottom to make each half level.

Whisk eggs and cream together.  Melt butter in pan.  Add egg mixture, then peppers and herbs.  And, then goat cheese and salt.  Stir until lightly cooked.

Spoon the cooked egg mixture into the avocado.  Top with  extra herbs if desired and a sprinkle of cracked pepper.

P.S.  strawberries are in photo because I picked them from the garden this morning and they wanted some attention.
